Herbed Havarti and Pork Grilled Cheese

Happy Easter, Everyone! We hope you had a wonderful day of festivities yesterday, whether it was spent attending a church service, playing outside, dyeing eggs, or gathering with family and friends around the table.

If you participated in the latter, chances are you have some great Easter leftovers you may be looking to transform into a creative new meal today. Well—we’re here to help! We think you can never go wrong with a delicious grilled cheese sandwich. It’s a great way to use up certain ingredients while uniquely customizing the dish to match seasonal flavors.

That’s why the Easter edition of our Holiday Grilled Cheese series highlights a few different recipes, to work with whatever leftovers you may have on hand. Featured Grilled Cheese: Herbed Havarti and Pork Grilled Cheese

Herbed Havarti and Pork Grilled Cheese

Roasted pork is a perfect entrée for Easter dinner—the tender, flavorful meat can adapt to any type of seasoning and is an ideal pairing for many classic sides like cheesy potatoes or steamed veggies. Its adaptability also makes pork the choice protein for our new grilled cheese recipe, debuting alongside peppery arugula, herby Havarti cheese, and a few other flavor-boosting components.

For this recipe, we used prepared pork tenderloin (making this an easy “anytime” leftovers meal), but you can use whatever cooked pork you have on hand, such as roasted pork loin or braised pork shoulder. Simply prepare the cooked meat by carving it into thin slices and layering it in amongst the other ingredients.

Our preferred cheese for this sandwich is a combination of provolone (a mild, semi-soft cheese with a slightly smoky flavor) and herbed Havarti (a creamy, meltable cheese with a mild flavor). The mild nature of both cheeses allows the herbs and seasoning to truly shine. Choose any flavor of Havarti that you desire, or feel free to add your own freshly chopped herbs instead.

In addition to fresh arugula, the last crucial element to this recipe is the tangy herb mayo. Every sandwich needs a fun condiment and this spread of mayonnaise, capers, and lemon pepper seasoning adds just the right accent to the roast pork slices and creamy cheese blend.

Finish it all off between two slices of Martin’s Potato Bread and pan-fry to your desired level of toastiness. Then enjoy!
