8 Slices Martin’s Potato Bread
1 Cup Mayonnaise
3 Tablespoons Capers
1 Teaspoon Lemon Pepper
2 Cups Baby Arugula
1 Prepared Pork Tenderloin, sliced very thin
4 Slices Provolone Cheese
1 Cup Herbed Havarti Cheese, shredded
Serves: 4
Directions
Step 1
Place medium pan on stove over medium-high heat.
Step 2
In a small bowl, stir together 1/2 cup mayonnaise, capers, and lemon pepper.
Step 3
Lightly brush one side of each slice of Potato Bread with a thin layer of plain mayonnaise. On opposite side of 4 slices, spread the lemon-pepper-caper-mayonnaise mixture.
Step 4
For each sandwich, layer about 1/2 cup arugula leaves, a few slices of pork, 1 slice provolone cheese, and sprinkled Havarti cheese on top of mayonnaise mixture. Top with another slice of bread without mayonnaise mixture (plain mayonnaise side facing out).
Step 5
Pan fry each side of each sandwich until bread is toasted and cheese has melted, about 3 minutes per side.
Step 6
Cut each sandwich in half and serve hot.
