Hopefully you’re enjoying the changing of the seasons as the weather starts to warm and things around us begin to grow and bloom. As we approach mid-spring, it seems a perfect time to start incorporating some fresh seasonal produce into our daily diet.

Another one of our favorite things about spring is integrating fresh, flavorful herbs into our favorite recipes. Adding bright flavors like basil, parsley, dill, or garlic can really take a meal to a whole new culinary level.

Roast Beef with Herbed Goat Cheese

With an equal balance of meat and veggies, this sandwich is perfect for herbivores and carnivores alike. Pair together some thinly sliced roast beef, earthy microgreens, sliced radishes, and a creamy garlic and basil goat cheese spread for some nice contrast. Serve on Martin’s 100% Whole Wheat Potato Bread for some of that whole grain goodness!

Roast Beef with Herbed Goat Cheese

Serves 2


  • 4 Slices 100% Whole Wheat Potato Bread
  • ½ Pound Roast Beef, thinly sliced
  • 4 Ounces Goat Cheese, softened
  • 1 Clove Garlic, minced
  • ¼ Cup Fresh Basil, chopped
  • 4-5 Sprigs Parsley, chopped
  • 1 Teaspoon Chopped Chives
  • 4 Radishes, thinly sliced
  • 1 Cup Microgreens or Sprouts

Vegetable Sandwich with Dill Sauce

Did you know that it’s beneficial to include a variety of colors into your daily diet? Different categories of colors often provide unique nutrients and vitamins that your body needs to function. Try adding this delicious sandwich recipe to your meal plan – it’s stacked high with all sorts of colorful vegetables, from green cucumbers and lettuce, to red onion and orange carrots.

Vegetable Sandwich with Dill Sauce 2

Serves 4


  • 8 Slices Martin’s Whole Wheat Potato Bread
  • 1/2 Cup Plain Yogurt
  • 3 Tablespoons Chopped Fresh Dill
  • 1 1/2 Teaspoons Dijon Mustard
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon White Wine Vinegar
  • Salt
  • Fresh-Ground Black Pepper
  • 8 Leaves of Green Leaf Lettuce
  • 4 Slices Provolone Cheese
  • 2 Tomatoes, sliced
  • 1 Cucumber, peeled and thinly sliced
  • 1 Small Red Onion, thinly sliced
  • 1 Cup Alfalfa Sprouts
  • 1 Carrot, peeled and grated

Turkey Veggie Sandwich

This refreshing spring sandwich on Martin’s Old-Fashioned Real Butter Bread incorporates much of the season’s fresh produce, including garlic, basil, tomato, sprouts, onion, and spinach. For even more flavor, you can try adding some sliced avocado or this Avocado Herb Dip.

  • ¼ Cup Mayonnaise
  • ½ Teaspoon Minced Garlic
  • 6-8 Leaves Fresh Basil, chopped
  • Salt and Pepper, to taste
  • 4 Slices Martin’s Butter Bread
  • 6 Slices Roasted Turkey Breast
  • 4 Slices Roma Tomato
  • Handful of Sprouts
  • Handful of Baby Spinach Leaves
  • 4-6 Thin Slices Red Onion
  • 2 Slice Swiss Cheese
