With the first whispers of fall in the air, there’s something magical about the season’s arrival. The days grow shorter, and the cool breeze starts to replace summer’s heat. The trees put on a show, draping the world in warm hues of orange, red, and gold. It’s that time of year when we start craving everything cozy—soft sweaters, flickering fireplaces, and, of course, comfort food that warms both body and soul.

Fall’s arrival also means it’s time for seasonal flavors to make their debut. From spiced apples to roasted root vegetables to freshly baked pie, this season brings with it the tastes we’ve all been waiting for. And what better way to enjoy those flavors than with French toast? Whether you’re huddled indoors for a chilly weekend brunch or celebrating a crisp, clear morning, fall-inspired French toast is the ultimate seasonal treat.

If you’ve been following along, you know this is the final installment of our seasonal French toast series. We started back in January with the decadent Winter Wonderland French Toast, followed by the bright and floral Lavender Lemon French Toast in spring. Then, we took things up a notch with the Strawberries and Cream French Toast Casserole in summer. Today, we’re rounding out the series with a recipe that encapsulates the rich, comforting flavors of autumn.

This French toast creation takes Martin’s Maple Brown Sugar Swirl Potato Bread and elevates it with a luscious custard, crunchy pecan pie topping, and a spiced caramelized pear filling. Pears, with their juicy sweetness, pair perfectly with the warm spices of fall, while the pecan topping is reminiscent of a beloved holiday dessert. It’s a dish that feels like a cozy fall afternoon on a plate.

Fall French Toast

Total Time: 2 Hr, 35 Min; Serves: 6

Ingredients

French Toast:

  • 12 Slices Martin’s Maple Brown Sugar Swirl Potato Bread
  • 3/4 Cup Whole Milk
  • 3/4 Cup Heavy Cream
  • 6 Large Eggs
  • 3 Egg Yolks
  • 2 Tablespoons Vanilla Extract
  • 1 1/2 Cups Unsalted Butter
  • 2 Cups Light Brown Sugar, packed
  • 2/3 Cup Light Corn Syrup
  • 1/2 Cup Maple Syrup
  • 2 Cups Pecans, chopped

Pear Filling:

  • 7 Pears, peeled and sliced
  • 1/4 Cup Water
  • 2 Teaspoons Fresh Lemon Juice
  • 1 Cup Brown Sugar
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Nutmeg
  • 3 Tablespoons Cornstarch

For Serving:

  • Whipped Cream (optional)

Directions:

  1. Preheat the oven to 350 degrees (F).
  2. In a large bowl combine the milk, cream, eggs, yolks, and vanilla, beat well and set aside.
  3. Arrange 12 slices of bread in two 9 x 13 casserole dishes. This should be six slices of bread in each dish.
  4. Pour half the liquid mixture over the bread in one dish, and the other half of the liquid over the other dish. Cover each dish tightly with plastic wrap and refrigerate while making the pecan pie topping below.
  5. In a small saucepan over medium heat melt the butter. Remove from heat and whisk in the brown sugar, corn syrup, maple syrup, and pecans.
  6. Spread this mixture evenly across the bottom of another two 9x 13 casserole dishes.
  7. Carefully arrange six pieces of soaked bread on top of the mixture in each dish. Bake for 35 minutes.
  8. While the French toast is baking, in a small saucepan combine sliced pears, water and juice of one lemon. Cover and cook over medium-high heat, stirring occasionally, for 8 minutes.
  9. In a separate bowl, combine brown sugar, cornstarch, cinnamon, and nutmeg. Whisk to combine.
  10. Pour over pears, and stir constantly until sauce thickens approximately two minutes. Remove from heat and let sit for five minutes.
  11. Remove French toast from the oven. Cool for five minutes.
  12. Take one of the casserole dishes and top each piece of French toast with pear filling. Place another piece of French toast (from the other dish) on top of each slice with filling so that they are now “stuffed.”
  13. Remove each stuffed French toast from casserole dish, flipping over so the pecan mixture is on top. Serve with additional caramelized pear slices and/or whipped cream (optional). Enjoy!
