For the French Toast Bites
1 pack Martin’s Sweet Dinner Rolls (12 rolls)
2 tablespoons butter, for pan-frying
Powdered sugar, for dusting
Cinnamon Cream Cheese Filling
6 oz cream cheese, softened
3 tablespoons powdered sugar
1 tablespoon brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
2 tablespoons heavy cream
Carrot Cake Custard
4 large eggs
1 cup whole milk
½ cup heavy cream
⅓ cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup finely shredded carrots (patted dry with a paper towel)
Yield: 12 Rolls
Directions
1. Make the Cream Cheese Filling
In a medium bowl, combine cream cheese, powdered sugar, brown sugar, cinnamon, nutmeg, vanilla, and heavy cream. Mix until smooth and creamy. Transfer to a piping bag or a zip-top bag with the corner snipped off.
2. Prepare the Custard
In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla, cinnamon and salt until well combined. Stir in the shredded carrots.
3. Stuff the Rolls
Cut a small slit into the side of each Martin’s Sweet Dinner Roll, being careful not to cut all the way through. Pipe about 1 tablespoon of filling into each roll.
4. Dip and Cook
Preheat a nonstick skillet over medium heat and melt 1 tablespoon of butter. Dip each stuffed roll into the custard mixture, coating all sides but allowing excess to drip off. Cook for 2–3 minutes per side until golden brown and cooked through. Repeat with remaining rolls, adding more butter as needed.
5. Finish and Serve
Dust the warm bites with powdered sugar and serve!
