French Toast with Raspberry Sauce

Ingredients


Basic French Toast, prepared

2 Cups Raspberries, divided

3/4 Cup Granulated Sugar

1/2 Cup Water, plus 2 tablespoons

1/2 Teaspoon Vanilla Extract

2 Teaspoons Cornstarch

1 Tablespoon Butter


Directions


Step 1

Prepare Basic French Toast recipe.

Step 2

In a saucepan over medium heat, mix together 1 1/2 cups raspberries, sugar, and ½ cup water until sugar is dissolved. Heat the mixture to boiling, stirring often. Reduce heat and add vanilla.

Step 3

In a small cup, combine the cornstarch and two tablespoons of water. Mix well.

Step 4

Stir this into raspberry mixture. Simmer over medium-low heat for 4 minutes or until the mixture has thickened slightly.

Step 5

Remove from heat. Add 1 tablespoon of butter and mix until the butter has completely melted.

Step 6

Allow the mixture to cool for 15 minutes, then stir in the remaining raspberries (if desired).

Step 7

Layer ½-1 tablespoon of raspberry sauce between each layer of prepared French toast (we did 4 layers). Repeat with each stack of French toast.

Step 8

Decorate and serve with side of fresh berries, if desired.
