3 Slices Bacon

1/4 Cup Half-and-Half or Heavy Cream
1/4 Cup Parmesan Cheese, grated
1/2 Teaspoon Salt, plus more for serving
3/4 Teaspoon Fresh Cracked Black Pepper, plus more for serving
2 Tablespoons Fresh Scallions, chopped
2 Tablespoons Fresh Parsley, coarsely chopped
1 Large Clove Garlic, crushed
2 Tablespoons Unsalted Butter, plus more for serving

For the Hollandaise Sauce:
3 Egg Yolks
1/4 Teaspoon Dijon Mustard
1 Tablespoon Lemon Juice
1 Dash Hot Sauce
1/2 Cup Butter

Directions
Step 1
Fry bacon until crispy. Set aside on a paper towel-lined plate to drain. Once rested, chop into medium sized pieces.
Step 2
Melt 1 tablespoon butter on a large skillet or nonstick pan over medium heat.
Step 3
In a medium bowl whisk together eggs, milk, cream, parmesan, salt, pepper, garlic, scallions, and parsley.
Step 4
Dip bread in egg mixture, flipping to coat both sides.
Step 5
Transfer soaked bread to the hot skillet. Fry until golden brown on both sides. Repeat with remaining slices, working in batches if necessary.
Step 6
Prepare the hollandaise:
In a food processor or blender, pulse together egg yolks, dijon mustard, lemon juice, and hot sauce until smooth. Melt the butter in a small bowl in the microwave, until hot. Gradually pour hot butter into the food processor or blender while continuing to mix on low. Blend until thick. Transfer to a bowl and keep warm until ready to serve.

Serve Savory French Toast topped with salt and pepper, crumbled bacon, fresh herbs, and prepared hollandaise sauce.
