Sweet Party Potato RollsIngredients
7 oz Cooked Lobster Meat, cut into 1/2-inch chunks
1/3 Cup Mayonnaise
1 Rib Celery, finely diced
1 Tablespoon Finely Diced Dill Pickle
1 Tablespoon Freshly Chopped Parsley
1 Teaspoon Minced Tarragon
1/2 Teaspoon Lemon Zest
Salt and Freshly Ground Black Pepper, to taste
12 Martin’s Sweet Party Potato Rolls
Serves: 8-12
Directions
Step 1
In a bowl, combine the lobster meat with the mayo, celery, pickle, parsley, tarragon and lemon zest. Stir well to combine and season to taste with salt and pepper.
Step 2
Slice the rolls in half.
Step 3
Place rolls on a platter and spoon lobster mix onto the bottom halves. Cover with the top halves and serve.
