Martin’s Sweet Dinner Potato Rolls
1 Pound Ground Lamb
2 Tablespoons Fresh Oregano, chopped
2 Tablespoons Fresh Parsley, chopped
4 Garlic Cloves, grated
½ Tablespoon Onion Powder
1 Tablespoon Coarse Salt
1 Tablespoon Cracked Black Pepper
1 Egg
½ Cup Panko Breadcrumbs
2 Tablespoons Olive Oil
2 Cups Plain Greek Yogurt
4 Tablespoons Fresh Dill, chopped
Zest of One Lemon
2 Tablespoons Lemon Juice
1/2 Cup Feta Cheese, crumbled
1 Cucumber, thinly sliced
2-3 Small Tomatoes, thinly sliced
Serves: 12
Directions
Step 1
Slice each Martin’s Sweet Dinner Potato Roll in half horizontally. Set aside.
Step 2
In a mixing bowl, combine yogurt, dill, lemon zest, lemon juice, feta cheese, and half of the garlic. Mix well. Add salt and pepper to taste. Refrigerate until ready to assemble sliders.
Step 3
In large mixing bowl, combine ground lamb, oregano, parsley, remaining half of garlic, onion powder, salt, black pepper, eggs, breadcrumbs, and olive oil. Mix until evenly combined.
Step 4
Form burger mixture into 12 even spheres.
Step 5
Heat a cast iron skillet or griddle to medium heat. Drizzle with olive oil. Add meat and flatten with the back of a spatula. Cook on both sides for 2-3 minutes or until golden brown and crispy. Ensure internal temperature is at least 145° F.
Step 6
Top bottom halves of Martin’s Sweet Dinner Potato Rolls with lamb burgers, tomato slices, cucumber slices and a dollop of the prepared feta yogurt sauce. Place top half of bun on and enjoy!
