Fried Green Tomato Sliders

Ingredients


Cajun Sauce

½ Cup Mayonnaise

½ Cup Sour Cream

2 Tablespoons Tomato Paste

2 Teaspoons Cajun Seasoning

½ Teaspoon Dill Weed

¼ Teaspoon Cumin

½ Teaspoon Tabasco, to taste

½ Teaspoon Smoked Paprika

2 Tablespoons White Vinegar

¼ Teaspoon Black Pepper

Salt, if needed

Slaw

4 Cups Cabbage Slaw, ready-to-eat shredded

1 Cup Red Onion, thinly sliced

2 Jalapeños , thinly sliced

1 Teaspoon Sugar

1 Tablespoon Dijon Mustard

2 Tablespoons White Vinegar

Juice of 1 Lemon

2 Tablespoons Mayonnaise

1 Teaspoon Worcestershire Sauce

Salt and Pepper, to taste

Fried Green Tomatoes

2 Green Tomatoes, sliced ¼ inch thick

Salt and Pepper, for tomato slices

1 Cup Flour

2 Eggs

½ Cup Buttermilk

2 Cups Panko

1 ½ Tablespoons Kosher Salt

Canola Oil, for frying

Serves: 6

Directions


Step 1: Prepare the slaw

  1. In large bowl, mix all slaw ingredients until fully coated.
  2. Cover bowl and refrigerate until ready to use.

Step 2: Prepare the Cajun sauce

  1. In medium bowl, whisk all Cajun sauce ingredients together until well combined.
  2. Cover bowl and refrigerate until ready to use.

Step 3: Prepare the Bacon

Cut bacon slices in half. Heat medium-large skillet over medium-high heat. Add bacon slices to pan and cook until crispy. Remove from pan onto plate covered with paper towels. Set aside.

Step 4: Prepare the fried tomatoes

Dry tomatoes slices by dabbing with paper towels. Lay slices on cooling rack. Season with salt and pepper. Set aside.

Step 5

In three shallow pans, add flour to one, eggs and buttermilk to one, and panko, salt, and pepper to one.

Step 6

Coat each tomato slices first in flour, then egg mixture, then panko mixture.

Step 7

In same pan used for bacon, drain excess bacon grease and fill pan with 1 – 1 ½ inches of canola oil. Heat oil to 350⁰F.

Step 8

Fry each tomato slice in hot oil for 1-2 minutes per side, frying about 3-4 at a time. Do not overcrowd pan.

Step 9

Set fried tomato slices on cooling rack covered with paper towels.

Step 10

Repeat until all tomato slices are fried.

Step 11: Assemble

  1. Cut Martin’s Sweet Dinner Potato Rolls into two sheets, then cut out individual rolls.
  2. Spread Cajun sauce on bottom bun, add tomato slice, add slaw, then place 2 bacon slices, and add top bun.
