It may have been a much milder winter than in recent years, but that doesn’t mean we’re not still eagerly anticipating spring’s arrival. In a few short days it will officially be spring—giving us all the more reason to transition from our wintertime cozy comforts to our fresh spring favorites.
But before we get ahead of ourselves, there’s another annual event that occurs before the start of spring: St. Patrick’s Day! Whether you can claim Irish heritage or not, what better way to pair these two celebrations than with some vibrant green veggies, in the form of creative toast toppings?

Cucumber Toast with Green Goddess Hummus {The Green Goddess}
There’s nothing more refreshing than some crisp cucumber. These thinly sliced ribbons make for a beautiful presentation atop some homemade Green Goddess Hummus. Classic hummus (chickpeas, tahini, olive oil, lemon juice, garlic, and salt) combined with fresh herbs and veggies such as parsley, basil, and dill creates a flavorful variation with a naturally green tint. Finish off the toasts with a hint of lemon juice and red pepper flakes and you have a wonderful springtime treat!

Guacamole Toast {The Guacamole}
This recipe is a fun spin on the popular “avocado toast.” Transform your avocados into guacamole by adding lime juice, jalapenos, salt, red onion, and cherry tomatoes. Then spread it onto toasted Martin’s Butter Bread garnished with fresh cilantro, salsa verde, or sliced serrano peppers for a Mexican-inspired veggie toast, perfect for brunch or snacktime!

Smashed Edamame Toast {The Imposter}
This toast topping may look similar to hummus or mashed avocado… but it’s actually made from edamame—or young soybeans. The boiled soybeans are pureed along with ricotta cheese, parmesan, parsley, garlic, lemon juice, lemon zest, salt, pepper, and olive oil until they form a smooth, creamy spread. Add this to a slice of toasted Martin’s Whole Wheat Potato Bread, along with some microgreens, alfalfa sprouts, lemon zest, and additional edamame for a healthy and delicious, veggie-filled treat!
