Avocado and Egg White Breakfast Toast

Ingredients


2 Slices Martin's Potato Bread, toasted

2 Egg Whites

1/2 Avocado, mashed

1/4 Cup Pepper Jack Cheese, shredded

Salt and Pepper, to taste

Sriracha, if desired


Directions


Step 1

Toast bread to desired level.

Step 2

Cook egg whites over med-low heat in a small skillet. Cover with a lid to help the egg whites cook evenly. The egg whites should be cooked in about 2-3 minutes. Remove from heat and set aside.

Step 3

Spread the mashed avocado on both slices of bread. Top each slice of bread with half of the egg whites and the pepper jack cheese.

Step 4

Season with salt and pepper, to taste. If desired, top with a drizzle of sriracha sauce. Serve.
