12 Martin’s Sweet Dinner Potato Rolls
8 ounces Mexican Chorizo, browned
1 ripe avocado, sliced thin
4 ounces queso fresco, crumbled
2 cups chopped iceberg lettuce
1 cup chopped tomatoes
Spicy Mayo:
½ cup mayonnaise
3 tablespoons sriracha hot sauce
Yield: 12 Sliders
Directions
Step 1
Preheat oven to 375˚F. Slice your slider buns horizontally and place the bottom layer in a baking sheet. Bake the buns for 5 minutes just to toast them lightly.
Step 2
Meanwhile, add chorizo to a medium skillet over medium heat and cook, breaking up the chorizo as it browns. Cook until browned and then remove from heat.
Step 3
Prepare other slider ingredients: Chop lettuce, tomato, avocado, and prepare sauce.
Step 4
When slider buns come out, drizzle heavily with sauce. Top with avocado slides and top with browned chorizo. Top with crumbled cheese and return to the oven for five minutes.
Step 5
Remove sliders and top with lettuce and tomatoes. Optionally, add another drizzle of sauce. Add top buns and slice into individual sliders.
Step 6
Serve sliders while warm.
