Salmon Cakes

Ingredients


2 Martin’s Slider Potato Rolls, stale or slightly dried (or whatever Martin’s Potato Rolls or Bread you have leftover in your pantry)

2 Tablespoons Butter

1 Clove Garlic, minced

Salmon Cakes:

2 Strips Bacon, cooked until crispy, crumbled, bacon fat reserved

¼ Cup Chopped Onion

1 Egg

½ Cup Mayonnaise

2 Teaspoons Dijon Mustard

½ Teaspoon Sugar

½ Lemon, zested

14 Ounces Canned Salmon

1 Baked or Boiled Russet Potato, peeled, fluffed with a fork

2 Tablespoons Grated Parmesan

Freshly Ground Black Pepper, to taste

½ Cup Vegetable Oil

Martin’s Slider Potato Rolls, for serving (optional)

Tartar Sauce, for serving (optional)

Coleslaw, prepared, for serving (optional)

Directions


Step 1

To prepare Martin’s Garlic Bread Crumbs: Place rolls or bread in food processor for 1-2 minutes, or until desired breadcrumb size is reached. Tip: Use stale bread that is past its expiration date or bake a few slices of fresh bread in a 350°F oven until slightly dried out, but not toasted. Melt butter in medium skillet over medium heat. Add garlic and stir. Cook until fragrant. Add Martin’s breadcrumbs and stir. Cook until golden brown.

Step 2

Cook bacon via conventional method, in skillet or on griddle, until just done to preferred texture.

Step 3

Heat 1 tablespoon of the reserved bacon fat in a small sauté pan over low heat. Add the onions and cook until translucent. Allow the onions to cool.

Step 4

Mix bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest in a bowl. Add the salmon and potato, mixing gently after each addition.

Step 5

Form the mixture into 6 medium-sized patties. In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste. Coat the patties in the bread crumb topping.

Tip: To help the patties stay together, you can freeze the mixture for about 10 minutes.

Step 6

Heat 1/4 cup of the oil in a large sauté pan over medium heat, and cook the salmon cakes in batches until golden, about 3 to 4 minutes per side. Add more oil, as necessary.

Step 7

Alternately, you can prepare the salmon cakes using an air fryer:

Transfer the salmon patties to the air fryer basket and air fry at 400F for 8 to 10 minutes, flipping halfway until golden brown.

Step 8

Serve salmon cakes on a bed of greens with a lemon wedge and tartar sauce, or as a sandwich using Martin’s Slider Potato Rolls.
