Pie Crust
1 Pack (12 Rolls) Martin’s Sweet Dinner Potato Rolls, left out overnight to dry or toasted in the oven
6 Tablespoons Butter, melted
4 Tablespoons Brown Sugar
Pie Filling
1 1/2 Cups Half-and-Half Cream
1 Package (3.9 ounces) Instant Chocolate Pudding Mix
8 Ounces Frozen Whipped Topping, thawed
1/3 Cup Semisweet Chocolate Chips
1/3 Cup Miniature Marshmallows
1/3 Cup Chopped Almonds or Walnuts
Serves: 8-12
Directions
Step 1
For the crust: pulse the rolls into fine crumbs using a food processor.
Note: if you forget to leave the rolls out overnight, you can toast them in a 300-degree oven for 10-15 minutes.
Step 2
In a large bowl, mix together the bread crumbs, butter, and brown sugar. Press into a 9-inch round pie plate. Refrigerate at least 30 minutes before filling.
Step 3
In another large bowl, whisk cream and pudding mix for 2 minutes. Fold in whipped topping. Stir in chocolate chips, marshmallows, and almonds or walnuts.
Step 4
Transfer mixture to pie crust. Freeze until firm, about 6 hours.
Step 5
Remove from freezer 10 minutes before serving. If desired, top with extra marshmallows, almonds or walnuts, and chocolate sauce.
