Grilled Hot Dogs with Homemade Dill Pickle Relish

8 Martin’s Long Rolls
Homemade Pickle Relish, for serving
1 ½ Cups Apple Cider Vinegar
1 Teaspoon Mustard Seeds
1 Teaspoon Coriander Seeds
6 Large Dill Pickles, finely diced
1 Small Red Pepper, finely diced
1 Small Yellow Pepper, finely diced
1 Small White Onion, finely diced
2 Tablespoons Fresh Dill, chopped
8 Hot Dogs
Mustard (any variety), for serving
Ketchup, for serving (optional)
Prepare homemade pickle relish: Bring vinegar, mustard seeds, and coriander seeds to a boil in a medium non-reactive saucepan. Cook until reduced by half and slightly syrupy. Remove from the heat, add the remaining ingredients, and gently toss to coat. Season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour before serving.
Heat grill or large skillet to high heat. Grill hot dogs until lightly browned on all sides.
Place hot dogs in Martin’s Long Potato Rolls and top with mustard of choice and homemade pickle relish.
