12 Martin’s Long Potato Rolls (1½ packs)
1 Pound Brats, thickly sliced
1 Medium Yellow Squash, thickly sliced
1 Medium Zucchini, thickly sliced
1 Red Onion, chopped into large pieces
1 Red Bell Pepper, chopped into large pieces
6 Mushrooms, cut in half
12 Skewers (If wooden, soak in water for 1+ hours)
Marinade
½ Cup Olive Oil
¼ Cup Red Wine Vinegar
1 Teaspoon Dijon Mustard
1 Teaspoon Garlic Powder
½ Teaspoon Onion Powder
1 Teaspoon Italian Seasoning
Salt and pepper, to taste
Serves: 12
Directions
Step 1
In a large bowl or zip lock bag, add yellow squash, zucchini, red onion, red bell pepper and mushrooms.
Step 2
In a small mixing bowl, combine olive oil, red wine vinegar, Dijon mustard, garlic powder, onion powder, Italian seasoning, and salt and pepper to taste.
Step 3
Add marinade to vegetables and marinade for 4 or more hours.
Step 4
Alternatively thread brats and marinated vegetables on skewers.
Step 5
Grill for 15 to 20 minutes or until brats reach an internal temperature of 160 degrees.
Step 6
Place the kabob ingredients on Martin’s Long Potato Roll.
Step 7
