Deep Fried Cinnamon Apple-Raisin Sandwiches

Ingredients


4-8 Cups Vegetable Oil

4 Slices Martins Cinnamon-Raisin Swirl Potato Bread

2/3 Cup Apple Pie Filling

1/2 Cup Flour

1/2 Teaspoon Baking Soda

1 Egg Yolk

1/2 Cup Iced Water

1/2 Teaspoon Vanilla Extract

1/2 Teaspoon Cinnamon + Extra For Dusting

1/8 Teaspoon Cloves

1/8 Teaspoon Nutmeg

Powdered Sugar

Whipped Cream


Serves: 2

Directions


Step 1

Heat oil in deep saucepan or fryer to 375 degrees.

Step 2

In medium bowl, fully whisk the flour, baking soda, egg yolk, iced water, vanilla, cinnamon, cloves and nutmeg until no lumps remain. If the batter is too thick, add a little bit more water as needed.

Step 3

Take one slice of Martins Cinnamon-Raisin Swirl Potato bread and cover with 1/3 c apple slices from the pie filling. Note that the apples should be about the same thickness over the sandwich, so cut them as needed. Cover with another slice and press down slightly to flatten. Slice in half, diagonal and insert a toothpick into each corner at an angle to hold the sandwich together.

Step 4

Dip half of the sandwich into the batter and fully coat, letting excess batter drip off. Drop into the hot oil and fry on each side 2-4 minutes or until golden brown and crisp. Repeat with remaining slices.

Step 5

Remove and let sit on rack over paper towels to drain. Dust with powdered sugar and serve 1-2 halves with whipped cream lightly dusted with cinnamon.

Serves 2-4 depending on the appetite!
