2 Cups Purple Cabbage, shredded
2 Cups Green Cabbage, shredded
2 Cup Carrots, shredded
1/2 Cup Chopped Cilantro (loosely packed)
Juice from 1 Lemon
2 Tablespoons Olive Oil
2 Tablespoons Raw Honey
1 Tablespoon Apple Cider Vinegar
1/4 Teaspoon Salt
1 Teaspoon Fresh Minced Garlic (about 2 cloves)
Pinch of Pepper
Pulled Pork, prepared (for serving)
Martin’s Sandwich Potato Rolls (for serving)
Serves: 6-8
Directions
Step 1
In a large mixing bowl, toss together cabbage, carrots, and cilantro until combined.
Step 2
In a small bowl, mix together the remaining ingredients until well combined. Pour over the cabbage mixture and toss until slaw is fully coated and combined well.
Step 3
Cover and chill until ready to serve. Store in refrigerator for up to 2 or 3 days.
Step 4
Serve as a side or topping for burgers, sandwiches, or this classic pulled pork on Martin’s Sandwich Potato Rolls.
