White Bean Garlic Dip

3 Cans (15 oz each) White Beans, drained, liquid reserved

1/4 Cup Extra Virgin Olive Oil, plus more to taste

4 Cloves Garlic, chopped

3/4 Teaspoon Salt and Pepper, plus more to taste

1/2 Lemon, zest

1 Lemon, juice

1 1/2 Teaspoons Fresh Rosemary, chopped, plus more for garnish

Serves: 12-16


Step 1

Combine ingredients in a food processor and mix until smooth and creamy. Add desired amount of reserved liquid from white beans, to thin it out to desired consistency. Add more salt and pepper to taste.

Step 2

Serve as a dip with chips, crackers, veggies, or toast; or as a sandwich spread. Store in an airtight container in the fridge for several days. Can also be made up to 1-2 days ahead of time.
