Whipped Feta Dip with Roasted Tomatoes

Ingredients


Roasted Tomatoes:

1 Package (10 oz.) Grape Tomatoes

1/3 Cup Extra Virgin Olive Oil

Salt and Pepper, to taste

Whipped Feta Dip:

5 Ounces Feta Cheese, crumbled

8 Ounces Cream Cheese

1/4 Cup Water

1/2 Cup Extra Virgin Olive Oil

1 Tablespoon Lemon Zest Pepper, to taste

2 Tablespoons Honey

1-2 Bunches Fresh Thyme

1-2 Bunches Fresh Oregano

Toasted Hoagie Triangles:

Martin’s Hoagie Rolls

Olive Oil Spray

Onion Powder

Italian Seasoning

Salt and Pepper, to taste


Serves: 8

Directions


To Prepare Whipped Feta Dip:

  1. Preheat oven to 375°
  2. Line baking sheet with parchment paper. Add cherry tomatoes and top with 1/3 cup olive oil, salt and pepper. Bake for 20-25 minutes.
  3. Add crumbled feta, cream cheese, water, 1/2 cup olive oil to food processor. Process for 2-3 minutes. Add lemon zest, black pepper, and honey to the mixture and process for 2 minutes.
  4. Add feta dip to a dish and remove roasted tomatoes from the oven. Add roasted tomatoes. Drizzle remaining olive oil on top of the dip. Garnish with thyme, oregano, and black pepper. Serve with toasted bread and enjoy!

 

To Prepare Toasted Hoagie Triangles:

  1. Preheat oven to 350°F.
  2. Flatten Martin’s Hoagie Rolls with a rolling pin. Cut into triangular shaped pieces.
  3. Arrange triangles on a baking sheet that has been sprayed with oil.
  4. Spray triangles with oil then sprinkle with onion powder and Italian seasoning.
  5. Bake for 10-12 minutes.
  6. Enjoy with dip or as crostini.
