Star-Spangled French Toast Casserole

Ingredients


1 Loaf Martin’s Old-Fashioned Real Butter Bread, left out to dry slightly

4 Eggs

1 Cup Milk

1 Teaspoon Vanilla Extract

1 Tablespoon Granulated Sugar

1 Teaspoon Ground Cinnamon

1 Package Cream Cheese

5 Cups Mixed Berries (Raspberry, Blackberry, Blueberry)

1/2 Cup Granulated Sugar

1/2 Teaspoon Ground Cinnamon

1 Tablespoon Cornstarch


Serves: 8-12

Directions


Step 1

Preheat oven to 350F.

Step 2

Spray a 9×13 inch baking dish with cooking spray; set aside.

Step 3

Using a star-shaped cookie cutter, cut shapes out of each slice of bread, as many as will fit. Set the star cut-outs aside and cut the remaining bread (including crusts) into 1-inch cubes.

Step 4

In a large bowl, combine, eggs, milk, vanilla extract, 1 T sugar, and 1 tsp cinnamon; whisk together until blended.

Step 5

Lightly dunk the star-shaped bread pieces in the egg mixture, then remove and set aside on a separate plate. Then, add the bread cubes to the egg mixture, stirring to coat. Let sit in the mixture for 5 to 10 minutes, stirring occasionally.

Step 6

In a medium bowl, combine berries, ½ cup sugar, ½ tsp cinnamon, and cornstarch. Stir to combine.

Step 7

Pour half of the berries into the prepared baking dish.

Step 8

Spoon the soaked bread cubes over the berries. Top with the star-shaped bread pieces.

Step 9

Cut cream cheese into small pieces and top onto bread mixture, along with the remaining berries.

Step 10

Sprinkle the top with sugar.

Step 11

Bake for 35 to 45 minutes or until bubbling and golden brown.

Step 12

Sprinkle with powdered sugar and top with fresh berries, whipped cream, or maple syrup if desired. Serve.
