Spinach, Artichoke, and Brussels Sprout Bites

2 Packs Martin’s Sweet Party Potato Rolls (24 Rolls Total)

1 Cup Fresh Brussels Sprouts, shredded

1 Cup Frozen Chopped Spinach, thawed

3 Artichoke Hearts, drained and chopped

1 Teaspoon Garlic, minced

¼ Cup Parmesan Cheese, grated

4 Ounces Cream Cheese, softened

1/2 Cup Mozzarella Cheese, shredded

Salt and Pepper, to taste

Serves: 8-12


Step 1

Preheat oven to 350°F.

Step 2

Split both packs of Martin’s Party Potato Rolls apart. Scoop out center of each Martin’s Party Potato Roll, creating mini bowls, and place onto baking sheet.

Step 3

In a medium bowl, combine Brussels sprouts, spinach, artichoke hearts, garlic, and parmesan cheese. Mix in cream cheese and mozzarella cheese. Season with salt and pepper to taste.

Step 4

Evenly divide spinach mixture into each cup.

Step 5

Cover with foil, and bake for ten minutes. Remove foil and bake until golden brown.

Step 6

Serve warm. Enjoy!
