4 Slices Martin’s 100% Whole Wheat Potato Bread
¼ Pound Deli Roast Beef, thinly sliced
¼ Cup Fresh Broccoli, chopped
¼ Cup Frozen Corn, thawed
¼ Cup Cucumber, seeded, peeled, and chopped
2 Tablespoons Shredded Carrot
2 Tablespoons Celery, finely chopped
2 Tablespoons Green Onion, thinly sliced
Dressing:
1 ½ Teaspoons Prepared Horseradish
1 ½ Teaspoons Mayonnaise
1 ½ Teaspoons Reduced-Fat Sour Cream
½ Teaspoon Dijon Mustard
Salt and Pepper, to taste
Directions
Step 1
Prepare Dressing: In a small bowl, combine the horseradish, mayonnaise, sour cream, Dijon mustard, salt, and pepper.
Step 2
Combine Veggies: In another bowl, mix together the broccoli, corn, cucumber, carrot, celery, and green onion.
Step 3
Pour dressing over vegetable mixture; toss to coat.
