Ingredients


12 Slices Martin’s Old-Fashioned Real Butter Bread

1/4 Cup Olive Oil

For Margherita Pizza Cups:

6-8 Cherry Tomatoes, halved

6-8 Small Leaves Fresh Basil

1/2 Cup Mozzarella Cheese, shredded

1/2 Cup Garlicky Pizza Sauce

For BBQ Chicken Pizza Cups:

2 Ounces Chicken Breast, cooked, chopped

1/2 Cup BBQ Sauce

1 Small Red Onion, diced

1/2 Cup Mozzarella Cheese, shredded

1-2 Tablespoons Fresh Cilantro, whole leaves or roughly chopped

For Hawaiian Pizza Cups:

1/2 Cup Pizza Sauce

1-2 Tablespoons Pineapple, diced

4 Slices Deli Ham

1/2 Mozzarella Cheese, shredded

1 Pinch Garlic Salt


Directions


Step 1

Flatten bread slices with rolling pin.

Step 2

Using a circle cookie cutter or the rim of a glass, cut 3- or 4-inch circles from each flattened bread slice. Brush olive oil over bread rounds, then press into cups of a standard size muffin tin.

Step 3

Toast bread cups in a 200°F oven for 10-15 minutes, or until crisp and toasted. Remove from oven and increase temperature to 350°F.

Step 4

To assemble:

— Margherita Pizza Cups: Fill bread cups with some shredded mozzarella cheese, a spoonful of pizza sauce, more cheese, halved tomatoes and a pinch of fresh basil (save the rest for garnish).

— BBQ Chicken Pizza Cups: Fill bread cups with some shredded mozzarella cheese, some BBQ sauce, more cheese, then diced onion and chicken.

— Hawaiian Pizza Cups: Sprinkle bread cups with a pinch of garlic salt, then fill each with one slice of ham, a spoonful of pizza sauce, some mozzarella cheese, and diced pineapple.

Step 5

Bake pizza cups in preheated oven for 10-15 minutes, or until cheese is melted and filling is heated through. Remove from oven.

Step 6

Season with additional ingredients:

— Margherita Pizza Cups: Top with reserved fresh basil.

— BBQ Chicken Pizza Cups: Top with fresh cilantro.

— Hawaiian Pizza Cups: Sprinkle with another pinch of garlic salt, if desired.

Step 7

Serve warm.
