Pie Iron Breakfast Sandwich
2 Slices Martin's Whole Wheat Potato Bread
1 Medium Egg
Cooked Breakfast Sausage, crumbled
Salt & Pepper
Butter or Cooking Spray
Preheat the pie iron over the hot coals of your campfire.
Remove carefully and lay on heat-resistant surface, being careful not to touch the hot iron. Butter or spray both inside sides of the pie iron.
Butter one side of a slice of bread. Then, cut a whole in center of the bread and lay, buttered side down into the pie iron.
Break an egg directly into the hole. Sprinkle with salt and pepper to taste. Top with cooked sausage and cheese.
Place the second piece of bread on top and spread with butter.
Close pie iron over the sandwich and cook over hot coals until warm and crisp. Cooking time depends on how hot your coals are. Check after three minutes. If ready, flip the pie iron over and continue cooking the other side.
When done, remove from fire and enjoy!
