3/4 Cup White Sugar
1/4 Cup Light Brown Sugar
1 Cup Corn Syrup
3/4 Teaspoon Vanilla Extract
1/3 Cup Butter, melted
3 Eggs, beaten
1 Cup Chopped Pecans
24 Slices Martin's Potato Bread
Serves: 24
Directions
Step 1
Preheat the oven to 350 degrees F. Grease a mini muffin tin with butter or cooking spray.
Step 2
Flatten the bread slices with a rolling pin and cut with a circle cookie cutter, about 3 inches in diameter. Press the slices into the mini muffin tin.
Step 3
Add all ingredients except for the pecans into a medium size mixing bowl and stir until combined.
Step 4
Add a small amount of pecans to each bread cup in the muffin tin. Pour about 2 tablespoons of pie filling on top of pecans in each bread cup.
Step 5
Bake for about 25 minutes (cooking time may vary). Remove from oven and allow to cool for about 5 minutes. Remove each pie gently, use a fork if needed and allow to continue cooling on a wire cooling rack.
Serve.
