Pecan Pie Bites

Slices Martin's Potato Bread
Directions
  1. Preheat the oven to 350 degrees F. Grease a mini muffin tin with butter or cooking spray.

  2. Flatten the bread slices with a rolling pin and cut with a circle cookie cutter, about 3 inches in diameter. Press the slices into the mini muffin tin.

  3. Add all ingredients except for the pecans into a medium size mixing bowl and stir until combined.

  4. Add a small amount of pecans to each bread cup in the muffin tin. Pour about 2 tablespoons of pie filling on top of pecans in each bread cup.

  5. Bake for about 25 minutes (cooking time may vary). Remove from oven and allow to cool for about 5 minutes. Remove each pie gently, use a fork if needed and allow to continue cooling on a wire cooling rack.

    Serve.
