Panzanella Salad in a Jar {2 Variations}

Ingredients


1/4 Cup Cherry Tomatoes, halved

1/4 Cup Fresh Mozzarella Balls (optional)

1/2 Cup Torn Fresh Basil Leaves and/or Baby Spinach

1/2 Cup Martin’s Sweet Party Potato Rolls, stale or lightly toasted, cubed

1/2 Cup Martin’s Sweet Party Potato Rolls, stale or lightly toasted, cubed

1/8 Medium Red Onion, thinly sliced

1/2 Cup Arugula

Additional Ingredients (optional)


Serves: 1

Directions


Step 1

Cut Party Potato Rolls into 1-inch cubes. Brush with olive oil (about 1 tbsp.) and season with salt and pepper, to taste. Lightly toast in oven or pan-fry for 2-3 minutes or until golden brown. Set aside to cool.

Step 2

Prepare Dressing: add corresponding dressing ingredients to pint-size glass jar; stir to combine.

Step 3

First add any proteins or hardier fruits/vegetables like onions, peppers, cucumbers, or tomatoes.

Step 4

Next add more delicate ingredients like salad greens, arugula, basil, or spinach.

Step 5

Finish off with dry ingredients including toasted bread cubes.

Step 6

Store until ready to eat, up to 1 or 2 days. To serve, shake or stir ingredients together, and enjoy.
