1/4 Cup Cherry Tomatoes, halved
1/4 Cup Fresh Mozzarella Balls (optional)
1/2 Cup Torn Fresh Basil Leaves and/or Baby Spinach
1/2 Cup Martin’s Sweet Party Potato Rolls, stale or lightly toasted, cubed
For Balsamic Vinaigrette Dressing:
2 Tablespoons Extra Virgin Olive Oil, divided
2 Teaspoons Balsamic Vinegar
1/4 Teaspoon Honey
1/4 Teaspoon Dijon Mustard
1/4 Clove Garlic and/or Shallot, minced (optional)
1 Pinch Salt and Black Pepper

1 Pint-Sized Glass Jar w/ Lid

Directions
Step 1
Cut Party Potato Rolls into 1-inch cubes. Brush with olive oil (about 1 tbsp.) and season with salt and pepper, to taste. Lightly toast in oven or pan-fry for 2-3 minutes or until golden brown. Set aside to cool.
Step 2
Prepare Balsamic Vinaigrette Dressing: add remaining olive oil, vinegar, honey, mustard, shallot, garlic, salt, and black pepper to a pint-sized glass jar; stir to combine.
Step 3
Add cherry tomatoes and mozzarella balls (if desired).
Step 4
Top with the toasted seasoned bread cubes.
Step 5
Finish off with fresh basil and/or baby spinach leaves.
Step 6
Store until ready to eat, up to 1 day. To serve, shake or stir ingredients together, and enjoy.
