Oven Baked Frittata Breakfast Sandwiches

Ingredients


9 Martin's 12-Sliced (Slider) Potato Rolls

8 Large Eggs

1/4 Teaspoon Salt

1/4 Teaspoon Pepper

1 Cup Shredded Sharp Cheddar

1/2 Cup Bacon Pieces

Sliced or Diced Tomatoes

Optional:

Sausage

Peppers

Onions

Mushrooms

Spinach

Pepper Jack or Other Favorite Cheese


Directions


Step 1

Whisk eggs, salt and pepper together until thoroughly blended. Add cheese and bacon and stir well.

Step 2

Pour into a 9×9 pre-greased baking dish. Placed sliced tomatoes on top.

Step 3

Bake 40 minutes or until firm in the middle.

Step 4

Cut into squares and place on a Martin’s 12-Sliced Potato Roll.

Step 5

Note: To freeze, let the frittata cool before placing on the sandwich roll. Wrap in plastic wrap then place into a tightly sealed container or wrap in foil as well. When ready to eat, remove from container or foil and heat in the microwave for 1-2 minutes. Remove from plastic wrap and eat.
