Mini Chicken Patty Sandwiches

8 Ounces Ground Chicken

2 Slices Martin’s 100% Whole Wheat Potato Bread (pulsed into about ½ cup fresh breadcrumbs)

1/2 Cup Grated Carrot

1 Egg White, lightly beaten

1 Teaspoon Dried Parsley (or 1 tablespoon fresh parsley, finely chopped)

12 Martin’s Party Potato Rolls, split

Serves: 12


Step 1

In a large bowl, mix together ground chicken, breadcrumbs, carrot, egg white, and parsley. Form into 12 mini patties.

Step 2

Heat a greased grill or 1 tablespoon olive oil in a skillet over medium heat. Cook patties until cooked through, turning once, about 2-3 minutes per side.

Step 3

Freeze leftovers up to 2 weeks.
