2 Slices Martin’s 100% Whole Wheat Potato Bread

2 Tablespoons Hummus of your choice

2 Tablespoons Roasted Red Peppers, sliced

1/4 Cup (Loosely Packed) Baby Spinach

1/4 Cucumber, thinly sliced

1/4 Red Onion, thinly sliced

1 Tablespoon Black Olives, sliced

1 Tablespoon Crumbled Feta Cheese

1 Tablespoon Mild Banana Peppers

Serves: 1


Step 1

Spread hummus on both slices of bread.

Step 2

Top one slice of bread with spinach, cucumber, roasted red peppers, red onion, olives, banana peppers, and feta cheese. Top with second slice of bread, hummus-side down.

Tip: Customize the toppings to fit your preference. Here are some fun variations:

— Swap the cucumber for zucchini and roast it in the oven for 10-15 minutes along with the red onion, for a great smoky flavor addition.

— You can roast your own red peppers in the oven or on the grill, if you can’t find pre-roasted, jarred peppers.
