Homemade Peanut Butter
3 Cups Dry Roasted Peanuts, unsalted or salted
Additions: 1-2 Tablespoons Honey, Salt to taste
Yields: 1 Cup
Place peanuts in food processor.
Turn on food processor and let it run until very smooth. Stop every 30 seconds – 1 minute to scrape down sides and give motor a break. The mixture will go through several stages: crumbs, chunky, thicken into a ball, and then creamy and smooth. The whole process should take 8-10 minutes.
Stir in the honey and any additional salt, if desired.
Pour in small glass jar. Store in refrigerator.
Note: To make chunky peanut butter, stop processor once peanut fragments reach desired size. Remove a few tablespoons, amount depends on how crunchy you want the end result. Continue blending peanuts left in processor until smooth and creamy. Fold in peanut fragments that were previously removed.
