Homemade Hot Sauce {Customizable}

Ingredients


6 Oz. Fresh Chili Peppers of Choice (amounts may vary)

• Chipotle Pepper – 3 oz. dried and/or 20 small dried peppers

• Cayenne Pepper – 10 oz. fresh and/or 9 medium peppers

• Habanero Pepper – 6 oz. fresh and/or 12 small peppers

• Ghost Pepper – ½ oz. dried and/or 12 small dried peppers

1 Cup White Vinegar + ½ Cup Apple Cider Vinegar

1 ½ Teaspoons Kosher Salt

4 Cloves Garlic, peeled

Additional Ingredients (optional) – see quantity suggestions below

• Fruit: Mango, Peach, etc.

• Citrus: Lemon or Lime Juice

• Vegetables: Onion, Carrot, etc.

• Sweeteners: Honey, Sugar, Maple Syrup, etc.

• Seasonings

Special Equipment:

• Food-Safe Gloves

• Strainer or Cheesecloth (optional)

Spicy Chicken Sandwich:

• Martin’s Sandwich Potato Rolls

• Breaded Chicken Patties, prepared

• Optional fixings such as lettuce, tomato, or mayo


Directions


Step 1

Wash the peppers and remove the stems. Remove the seeds, if desired. Roughly chop peppers. (Note: You may want to wear food-safe gloves when handling hot peppers.)

Step 2

Add the peppers, vinegar, salt, and garlic to a pot and bring to a quick boil. Reduce the heat to medium-low and simmer for 10-15 minutes to allow the flavors to develop. Remove from heat and let cool slightly. (Note: This recipe uses a “quick-cook” method. You can also use a fermentation method for more complex pepper flavors. To do so, follow this recipe.)

Step 3

Pour mixture into a blender or food processor; blend until smooth. Transfer hot sauce into bottles or jars; optionally: strain out the pulp first for a smoother, thinner consistency.

Step 4

Note: You can add additional heat or flavors, if desired, by combining different types of peppers or adding optional ingredients such as fruit or fruit juice, spices, seasonings, or vegetables such as onions to steps 2-3 above. Simply add extra ingredients, re-blend and season to taste.

Our variations are as follows:

a) Chipotle (20 dried peppers) + 2 Tbsp. Lime Juice

b) Cayenne (9 medium fresh peppers) + 1 Tbsp. Honey

c) Habanero (12 small fresh peppers) + ¾ Cup Mango (fresh, diced)

d) Ghost (12 dried peppers) + 1/4 Cup Onion (chopped)

Step 5

Serve atop your favorite dishes, such as this Crispy Chicken Sandwich on Martin’s Sandwich Potato Rolls, shown here.
