12 Martin’s Sweet Dinner Potato Rolls
2 Cups Rotisserie Chicken, shredded
½ Cup BBQ Sauce, plus extra for drizzling
2 Ears of Corn on the Cob
2 Green Onions
½ Cup of Sharp White Cheddar Cheese, shredded
½ Cup of Mozzarella Cheese, shredded
¼ Cup Ranch Dressing
¼ Cup Pickled Red Onions, sliced
Fresh Basil and Cilantro, for topping
Serves: 8-12
Directions
Step 1
Cut the sheet of Martin’s Sweet Dinner Potato Rolls in half horizontally. Set both halves aside.
Step 2
Grill the ears of corn and whole green onions until they are slightly charred. Remove from grill; cut the corn off the cob and chop the onions.
Step 3
Reduce heat to medium/low. Add pizza stone to grill and heat for 5-10 minutes. Put one half-sheet of Martin’s Sweet Dinner Potato Rolls on pizza stone. Spread BBQ sauce across the top (this is in place of tomato sauce on a regular pizza).
Step 4
Cover the pizza with shredded cheeses.
Step 5
Add corn, chicken, green onion, pickled onion, a drizzle of BBQ sauce, and a light drizzle of ranch.
Step 6
Close grill cover for a minute or two until the cheese is fully melted and bubbly.
Step 7
Repeat steps 3-6 with second half-sheet of rolls.
Step 8
