8 Slices Martin’s Potato Bread
Softened Butter
3 Cups Shredded Mozzarella
1 Cup Crumbled Feta
1 16-oz Jar Roasted Red Peppers, drained and chopped
½ Cup Pitted Kalamata Olives, halved
1 Cup Fresh Spinach
1 Pinch of Dried Oregano
Serves: 4
Directions
Step 1
Butter one side of each bread slice. In a large skillet over medium heat, add one slice bread, butter-side down. Top with a quarter each of the mozzarella, feta cheese, roasted red peppers, kalamata olives, spinach, and oregano.
Step 2
Top with another bread slice, buttered side up, and cook until bread is golden and cheese is melty, 2 to 3 minutes. Flip and cook until golden, 2 to 3 minutes more.
Step 3
Repeat with remaining ingredients to make 4 sandwiches total.
