Egg Salad Burger

Ingredients


Egg Salad:

8 Eggs

1/4 Cup Mayo

2 Tablespoons Mustard

1-2 Teaspoons Hot Sauce

1/2 Lemon, juiced

3 Scallions, minced

2 Cloves Garlic, minced

1 1/2 Tablespoons Parsley, chopped

1 Teaspoon Smoked Paprika

1/4 Teaspoon Salt

Burger:

1 Pound Ground Beef

4 Slices Munster Cheese

4 Martin’s Sandwich Potato Rolls

4 Strips Bacon, cooked and cut in half

12 Pickle Chips

1/2 Cup Crushed Potato Chips

Arugula, optional


Serves: 4

Directions


Step 1

For egg salad: Bring water to a boil and add the eggs. Cook for 9-10 minutes. While they are cooking prepare a bowl with ice and water. Transfer the eggs to the bowl with ice.

Step 2

Peel the eggs and rinse off any excess shells.

Step 3

Chop the eggs and add them to a large bowl.

Step 4

Add all the remaining egg salad ingredients to the bowl and stir to combine. Taste and adjust salt if needed.

Step 5

For burgers: Split the ground beef in half and form four patties.

Step 6

Preheat a pan to high heat.

Step 7

Season the patties with salt and pepper and add to the pan.

Step 8

Cook to brown on both sides and until medium in the center, about 3-4 minutes per side. Add the cheese after flipping the burger once.

Step 9

Broil or toast the buns for a few minutes until golden.

Step 10

To assemble: Add arugula to the bottom buns, then the burgers, bacon, egg salad, pickles, chips, and lastly the top buns.
