Chicken Pesto Panini

4 Slices Martin's 100% Whole Wheat Potato Bread

2-3 Tablespoons Prepared Pesto

4 Slices Mozzarella Cheese

1 Cup Baby Spinach Leaves

2-3 Sun-dried Tomatoes, marinated

1 Chicken Breast, sliced into thin strips (or deli-style chicken)

1-2 Tablespoons Butter or Olive Oil

Step 1

Spread one tablespoon pesto on each piece of bread. Place mozzarella cheese on each side of the bread. Then layer a few spinach leaves, a few sun-dried tomatoes, and chicken. Put another bread slice on top.

Step 2

Butter both sides of sandwich (or brush with olive oil). Then place each sandwich on a panini press, skillet, or griddle. Press sandwiches (or grill on both sides) until warmed through, cheese has melted, and the bread is crisp.

Step 3

Serve sandwiches with Vegetable Bean Soup.
