Chicken Parmesan Panini
8 Slices Martin’s Butter Bread
2 Tablespoon Olive Oil
½ Cup Onion, finely chopped
½ Cup Mushrooms, finely chopped
2 Clove Garlic, minced
8 (2-3 oz. each) Chicken Breasts, pounded thin
1 Cup Mozzarella Cheese, shredded
1 Cup Marinara Sauce
Fresh Basil or Oregano Leaves
Heat olive oil in frying pan. Add onions, mushrooms, and garlic and sauté until fragrant, about 2-3 minutes. Set aside.
In the same pan, cook chicken over medium-high heat for 1-2 minutes on each side. Set aside.
Sprinkle 1/8 cup of mozzarella cheese on 4 slices of Martin’s Butter Bread.
Place 1 chicken breast on top of cheese.
Spread marinara sauce on chicken.
Top marinara sauce with 1 tablespoon of sautéed onions, mushrooms, and garlic.
Top with desired amount of fresh basil or oregano leaves.
Cover with 1 chicken breast and top with 1/8 cup of mozzarella cheese.
Top with second piece of bread.
Press sandwich in panini maker, one at a time. Alternatively, place one sandwich on skillet, and cook for 2-3 minutes on each side until heated through and cheese is melted.
Repeat until all sandwiches are cooked.
