Chicken, Hummus, and Avocado Sandwich

2 Boneless, Skinless Chicken Breasts

1 Tablespoon Olive Oil

1/4 Teaspoon each, Salt and Pepper

1/4 Teaspoon each, Garlic Powder and Paprika

8 Slices Martin’s 100% Whole Wheat Potato Bread

1/2 Cup Prepared Hummus (any flavor)

1 Ripe Avocado, sliced

1 Bunch Watercress, stems trimmed

1 Tomato, sliced

4 Teaspoons Sunflower Seeds, toasted

Serves: 4


Step 1

Place chicken breast on baking sheet. Drizzle with oil and then sprinkle with salt, pepper, garlic powder and paprika.

Step 2

Bake in 400°F oven for 30 to 35 minutes or until juices run clear. Let stand for 10 minutes. Slice crosswise.

Step 3

Spread each slice of bread with 1 tbsp hummus.

Step 4

On one slice of bread, layer avocado, watercress, reserved chicken, tomato and sunflower seeds.

Step 5

Sandwich with second slice of bread. Serve.
