10 Ounces Extra-Sharp Cheddar Cheese, shredded

10 Ounces Swiss Cheese, shredded

1 1/4 Cups Mayonnaise

4 Ounces Diced Pimiento

1 Teaspoon Dried Onion Flakes

1/4 Teaspoon Freshly Ground Pepper

9 Slices Martin's Potato Bread

9 Slices Martin's Whole Wheat Potato Bread

Grape Tomatoes

Black Olives

Serves: 7-9


Step 1

Make pimiento cheese spread by stirring together the first 6 ingredients.

Step 2

Spread half of the cheese mixture evenly on half of the potato bread slices; top with the remaining half of the potato bread slices. Spread remaining half of cheese mixture evenly on half of whole wheat potato bread slices; top with remaining half of whole wheat potato bread slices.

Step 3

Remove the sandwich crusts with a serrated knife; cut each sandwich into 4 squares.

Step 4

Arrange mini sandwiches on a serving plate in a checkerboard pattern, alternating potato bread and wheat bread. Garnish staggered sandwiched on one end with the cherry tomatoes, and the opposite end with black olives to resemble a game of checkers.
