Meals for Parents On-the-Go

A Busy Life

Try-outs, practices, scrimmages, tournaments… Coordinating all your children’s after-school activities feels like you’re training for a marathon of your own – a constant race from one thing to the next! We know that the life of a sports parent isn’t easy; there’s never quite enough time in the day to finish everything on your to-do list.

To help you out, we’ve compiled some quick-and-easy recipes to make your weekdays and nights a little simpler. From freezer-ready sandwiches to no-hassle snacks, we hope these ideas can save you the few extra minutes you need to drop your daughter off at gymnastics practice, help locate your son’s soccer gear, or throw in that second load of laundry.

Breakfast

It may be the “most important meal of the day,” but breakfast often gets neglected due to lack of time or energy. Try making a batch of egg sandwiches the night before and freezing them overnight. In the morning, just toss them in the microwave for a minute and be on your way!

Lunch

Let’s face it – packing nutritious lunches for your kids every day, plus getting them (and yourself) ready in the morning, can be a struggle. Just like with the breakfast sandwich, there are plenty of freeze-ahead options for lunchtime meals. Freezing works well with anything from a chicken or tuna salad sandwich to a simple PB&J. Prepare a variety of sandwich options the night before (or on the weekend) and let everyone pick their favorite to pack for their own lunch.

PB&J Variations

Peanut Butter and Jelly doesn’t have to be boring! Try incorporating different flavors and spreads to switch it up. Add hazelnut or chocolate spread. Replace the usual grape jelly with strawberry or peach. Add fresh fruit or nuts…the list goes on.

One of our favorite variations is PB&J Swirls! Flatten a piece of bread, spread on your toppings, roll it up, and slice it into sections. You can make these ahead of time and freeze them, then just take them out when packing lunches in the morning, or for a snack on the way to sports practice in the afternoon.

Weeknights may just be the busiest time of all, with every member of the family having something to do or somewhere to be. Whether you’re dealing with your family’s scattered schedules or trying to feed a carpool of kids, dinnertime can be pretty complicated. Here are some recipes to help you feed everyone in 30 minutes or less!
