Onion and Swiss Stuffed Mushrooms

These veggie appetizers are a great way to use up old bread. Take slightly dried Whole Wheat Potato Bread (or put it in a low oven to dry it out a bit), pulse it into breadcrumbs, and make it into a stuffing with onion, parsley, garlic, salt, swiss cheese, and vegetable broth. Fill button mushroom caps with the stuffing and bake for 10-12 minutes. Enjoy!

Mediterranean Turkey Panini

This grilled sandwich combines the delicious flavors of feta cheese, tomatoes, spinach, turkey, and garlic aioli, in a tasty Mediterranean-style. Layer it all between slices of Martin’s Whole Wheat Potato Bread and grill it in a panini press for a warm, crisp crust.

Grilled Vegetable Panzanella

Panzanella is a Tuscan-style salad with bread and tomatoes, and usually includes other ingredients such as vegetables, olive oil, spices, and other Italian flavors. Our version uses grilled Whole Wheat Potato Bread, tomatoes, mushrooms, onion, asparagus, zucchini, and a simple vinaigrette.
