4 Slices Martin’s Potato Bread
1 Clove Garlic, peeled
8 Gherkin Pickles, sliced lengthwise
1 Cup Non-Alcoholic Ale
4 Tablespoons Unsalted Butter
4 Teaspoons Worcestershire Sauce
8 Ounces Cheddar Cheese, grated
4 Large Egg Yolks
Salt and Pepper, to taste
Serves: 4
Directions
Step 1
In medium saucepan, combine non-alcoholic ale, butter, and Worcestershire sauce.
Step 2
Place saucepan on medium-low heat. Allow butter to melt for about 3 minutes. Stir well.
Step 3
Pour in grated cheddar cheese and stir well as cheese melts into mixture, about 6-8 minutes.
Step 4
Meanwhile, toast Potato Bread until crisp but not brown. Then, lightly rub garlic clove onto toast.
Step 5
Place four long slices of gherkin pickles on top of each slice of toast.
Step 6
Once cheese has melted fully and mixture is smooth and thickened, stir in egg yolk. (Tip: Stir in egg quickly, so it does not scramble)
Step 7
Leave cheese mixture on medium-low heat for another 3 minutes, stirring regularly. Season with salt and pepper as desired.
Step 8
Meanwhile, preheat oven to broil.
Step 9
Remove cheese mixture from heat and pour about one cup on top of toasts.
Step 10
Place toasts on top rack of oven set to broil until cheese starts to sizzle and brown. Remove and serve hot.
