Grilled Apple Tossed Salad

7-8 Tablespoons Olive Oil, divided

1/4 Cup Minced Fresh Cilantro

1/4 Cup Orange Juice

1/4 Cup Balsamic Vinegar

2 Tablespoons Honey

1 Garlic Clove, minced

1/2 Teaspoon Salt

1/2 Teaspoon Sriracha

2 Large Apples, cut into 1/2-inch wedges

1 Package (5 Ounces) Mixed Salad Greens

1 Cup Walnut Halves, toasted

1/2 Cup Crumbled Blue Cheese

4 Slices Martin’s Cinnamon-Sugar Swirl Potato Bread

Serves: 6


Step 1

To Make Croutons: Cut Swirl Bread into cubes, toss with 1-2 tbsp. olive oil, and bake in a 350 degree F oven until crispy.

Step 2

To Make Salad Dressing: Whisk together 6 tbsp. olive oil, cilantro, orange juice, balsamic vinegar, honey, garlic, salt, and sriracha in a medium bowl, toss apples with 1/4 cup dressing. Let stand 10 minutes.

Step 3

Place apple slices on a grill rack over medium heat; reserve marinade left in bowl. Grill apples, covered, until tender and lightly browned, 3-4 minutes per side, brushing with reserved marinade.

Step 4

To serve, toss salad greens with remaining dressing. Top with grilled apples, walnuts, cheese, and Swirl Bread croutons.
