Fried Turkey Sandwich

Ingredients


Turkey:

1 Boneless Skinless Turkey Breast (about 1 lb.)

2 Cups All-Purpose Flour

4 Teaspoons Salt

2 Teaspoons Freshly Ground Black Pepper

2 Teaspoons Smoked Paprika

2 Teaspoons Dried Thyme

2 Teaspoons Ground Mustard

1 Cup Buttermilk

3/4 Cup Canola Oil, for frying

Sandwich:

4 Martin’s Big Marty’s Rolls

4 Large Leaves Lettuce

1 Tomato, sliced

4 Slices Cooked Turkey Bacon

Spicy Mayo:

1/2 Cup Light Mayonnaise

1 Tablespoon Fresh Parsley or Basil, chopped

2 Tablespoons Buffalo Wing Sauce


Directions


Step 1

Cut turkey breast crosswise into 4 equal pieces. Using a meat mallet, pound thicker pieces slightly to ½-inch thickness; set aside.

Step 2

In a shallow dish, whisk together flour, salt, pepper, paprika, thyme, and mustard. Pour buttermilk into another shallow bowl.

Step 3

Dredge turkey pieces into flour mixture to coat well. Dip into buttermilk and let excess drip off before coating in flour again. Place on large plate.

Repeat with 3 remaining pieces of turkey breast.

Step 4

In a large shallow skillet heat oil over medium heat. Place turkey pieces into pan and fry for about 3 to 4 minutes or until edges are becoming golden brown. Flip and fry for another 3 to 5 minutes or until turkey is no longer pink inside. Remove to paper towel lined plate.

Step 5

Prepare Spicy Mayo: In a bowl, whisk together mayonnaise, hot sauce, and parsley.

Step 6

Spread some of the mayo onto bottom of buns and top with lettuce. Place turkey pieces on top and top each with bacon, tomato, and remaining mayo.
