Carrot cake is an Easter classic. Its unique flavor profile and obvious tie-in to the holiday (did someone say “Easter Bunny”?) makes this a must-serve dessert.
Every baker has their own special method for making carrot cake. Ours transforms ingredients like grated carrots, orange juice, apple butter, and nutmeg into a rich and moist bread pudding made with Martin’s Maple Brown Sugar Swirl Potato Bread! We also used a muffin pan to create cute single-serve cupcakes topped with the essential cream cheese frosting (in various pastel colors, of course) and finished them off with colorful malted milk eggs for a festive presentation.

Strawberry-Cinnamon Shortcake Trifles
Strawberry shortcake is a great dessert for any time of year, but we especially love it in spring or summer because of the vibrant taste and color of the fresh ripe berries!
Our version of this classic uses Martin’s Cinnamon-Sugar Swirl Potato Bread in place of traditional shortcake, which adds a delicious sweet-spice flavor and makes these a cinch to prepare! Circles of swirl bread are stacked into mini dessert cups alternating with layers of macerated strawberries and fluffy whipped cream. The finished result is these cute mini dessert trifles that show off all the layers and are perfect for celebrating spring.

Hummingbird Bread Pudding
Hummingbird cake is another holiday favorite, particularly in the southern United States. The key flavors for this classic spice cake are banana and pineapple, which team up to create a truly unique flavor that is to die for.
These single-serve hummingbird bread puddings would make an excellent addition to your next spring brunch. (Even the name sounds cheerful and spring-y!) Our recipe uses Martin’s Cinnamon-Raisin Swirl Potato Bread (raisins are a popular mix-in for spice cakes), mashed banana, crushed pineapple, chopped pecans, and shredded coconut (for even more tropical flavor). The baked puddings are topped with a cream cheese icing glaze and decorative pieces of candied pineapple for a nice finishing touch.
