Sweet Dinner Potato RollsIngredients
12 Martin’s Sweet Dinner Potato Rolls or 4-6 Martin’s Long Potato Rolls
1 Pound Lobster Meat
6 Tablespoons Unsalted Butter, melted
1 Lemon, for Zest and Juice
1 Clove of Garlic, smashed
3 Tablespoons Chives, chopped
Salt, to taste
2 Tablespoons Butter, for serving
Serves: 6
Directions
Step 1
Slice two connected Martin’s Sweet Dinner Potato Rolls along the top of the roll, creating a vertical slit for the lobster to be placed in.
Step 2
Melt the butter in a pan on the stove on a medium-low heat.
Step 3
Once the butter is melted, add in garlic, lemon zest, lemon juice, and salt.
Step 4
Add the lobster meat into the pan and cook for 6-8 minutes, or until bright red.
Step 5
Remove lobster meat from the pan, and set aside.
Step 6
Pour the melted butter from the pan into a dish for serving, or melt 2 tablespoons of butter into a small dish to serve with the lobster rolls.
Step 7
Stuff the Sweet Dinner Potato Rolls with the cooked lobster meat and serve with melted butter.
Optionally: You can first butter and toast the sides and top of the rolls prior to stuffing with the lobster meat.
