6 Martin’s Hoagie Rolls
1 Pound Ground Beef
1 Packet (1oz) Taco Seasoning
3 Cloves Garlic, minced
1 Medium Onion, diced
1 Can Black Beans, drained
1 Can Corn, drained
1/4 Cup Cilantro, chopped
3 Cups Mexican Cheese Blend, shredded
Sour Cream, for serving
Salsa Verde, for serving
Serves: 6
Directions
Step 1
Preheat oven to 350 degrees.
Step 2
Heat a large skillet over medium-high heat. Add the ground beef, onion, and taco seasoning and stir to combine. Sauté the mixture until the meat and onions are cooked through.
Step 3
Add the minced garlic and cook for another minute. Mix in the corn and black beans; remove from heat. Stir in chopped cilantro.
Step 4
Fill each hoagie roll with a heaping portion of the taco mixture. Top each with ½ cup cheddar cheese.
Step 5
Arrange the hoagies on a baking dish or cookie sheet. Bake for 8-10 minutes.
Step 6
Remove from oven, top with salsa verde and sour cream, and garnish with more cilantro if desired.
