Hot-Maple Fried Mushroom Sandwich

Ingredients


Primary Ingredients:

2 Martin’s Big Marty’s or Martin’s Sandwich Potato Rolls

200 Grams Oyster Mushroom Clusters

Vegetable Oil, for deep frying

Buttermilk Marinade:

1 1/2 Cups Buttermilk

1 Tablespoon Apple Cider Vinegar

1/4 Cup Hot Sauce

Salt & Pepper, to taste

1 Teaspoon Smoked Paprika

1 Teaspoon Garlic Powder

1 Teaspoon Onion Powder

Maple Miso Mayo:

1/4 Cup Mayo

1 Tablespoon Miso Paste

Hot-Maple Syrup:

1/4 Cup Maple Syrup

2 Tablespoons Hot Sauce

Dredge:

3/4 Cup Flour

3/4 Cup Corn Starch

Salt & Pepper, to taste

2 Tablespoons Smoked Paprika

2 Tablespoons Garlic Powder

2 Tablespoons Onion Powder

1 Teaspoon Dried Parsley

Toppings:

1/2 Cup Shredded Lettuce

6-8 Slices Bread and Butter Pickles, optional

Directions


Step 1

Tear oyster mushroom clusters into smaller clusters (2-3 mushrooms per cluster) making sure they are still attached together.

Step 2

Make the buttermilk marinade by combining buttermilk, apple cider vinegar, hot sauce, salt & pepper, smoked paprika, garlic powder, and onion powder. Stir to combine. Submerge the mushroom clusters and allow to marinate for at least 30 minutes.

Step 3

Meanwhile, make the maple miso mayo by combining mayo and miso paste in a bowl until smooth. Refrigerate until needed.

Step 4

Meanwhile, make the hot maple syrup by combining maple syrup and hot sauce in a squeeze bottle. Stir or shake to combine. Refrigerate until needed.

Step 5

Meanwhile, prepare dredge: combine flour, cornstarch, salt, pepper, garlic powder, onion powder, and dried parsley. Mix to combine.

Step 6

Once the mushrooms are finished marinating, transfer each cluster to dredge and toss to coat. Repeat for all mushrooms.

Step 7

Heat the vegetable oil in a deep fryer to 350 degrees F.

Step 8

Once the oil has reached temperature, fry the coated mushroom clusters until deep golden brown on all sides.

Step 9

Transfer mushrooms to a wire rack and sprinkle with salt. Repeat until all mushroom clusters are fried.

Step 10

In a dry, non-stick pan over medium heat toast the Martin’s Big Marty’s Rolls or Martin’s Sandwich Potato Rolls until golden.

Step 11

Construct your sandwich by spreading some mayo on both buns, then shredded lettuce, fried mushrooms, a generous drizzle of hot-maple syrup, and 3-4 slices of pickles; finish with the top bun, mayo side down.
